I have an old galvanized water tank that I was thinking about cutting one end off of and using it as a small fire pit/ring. Do you guys think this is OK to do? I am wondering if the galv. would give off fumes. How hot can it get before it poses a health concern?

Cut the sucker open then toss it into a bonfire for a few hours to burn off the galvanizing.

Yes, the galvanizing will give off fumes when heated. The zinc fumes are dangerous and/or toxic (look up "metal fume fever", etc).
The melting point of zinc (the metal that is the galvanized coating) is 787F.
It's not all that hard for a fire to get that hot.
Remove the zinc before using it for a fire ring. Burn it off (watch out for the fumes!), or use acid to remove it (hydrochloric acid aka muriatic acid aka pool acid will work, watch out for the fumes there as well. Because those fumes are hydrogen gas! Very-very-very flammable!!!!)

YOOS guys are correct about the zinc fumes. BUT; NO fumes come off of gasses , they are "VAPORS" . If any body wants to argue, take it up with the Federal Bureau of Mines .
FUMES are ONLY generated by molten metals and plastics . No matter what the police or firemen say .

dont forget to brush with machine or sandblasting after the burning... get all nasty residue out...
