Offset smoker

This is the smoker that was in the background of the bow press pics. I started it in Feb and finished the first of May. It is made from two old well tanks and the wheels are from old wheelbarrows. It turned out pretty good, however if I were to build another one I would probably look for some 18 or 20" pipe. The main reason is because the well tanks are a little bit thin and the pipe would hold heat better.

That's really nice. I've been looking at pics on the net to get ideas from and I've decided on the design you used. I was really interested in the vertical one but that would be a little top heavy. I'll be starting my smoker project soon but I'll be using 20" 5/16" pipe. It will be heavy but I have it available at work so I can save a lot of money there.

I think you will be way ahead using the pipe. I would also look at reverse air flow inwhich the heat and smoke come into the cooking chamber and pass under plates on the bottom then come back through the cooking chamber and exit through a chimney on the fire box side. These design is supposed to keep more even temps across the cooking chamber. Another good site to look at for smokers is http://www.barbecuenews.com/forum/default.asp. I learned a lot from there after I built this smoker and have several ideas to try on the next one.

gives me an idea. i have 2 pieces of pipe , about 20" dia. -about 1/2" thick.(each about 2' long) that ought to be heavy enough ?

I built one for the house last year using a propane tank as the starting point. Mine is a gas-burner however. I get the smoked flavor using one of the cast iron wood chip pans. Actually it cooks great like that, I used two pieces of black iron pipe for burners.

If anyone decides to build using the propane tanks though make very sure the tank is purged completly. It will ruin your day/week if it isn't purged.

I have not looked at the above mentioned link, but I do have some experience here as I built one like what is described. Works "GREAT" if you truly love the smokey flavor. This design forces the smoke to linger over the food and in the pit longer all depending on the dampers and flus. Here are a few construction pics of mine, I will post more pics when I finish painting it.

If anyone has any questions by all means drop me a line.

Note: I built the trailer, pit, smoker box and wood box from some sketchy ideas in my twisted cranium.

In image 511 you can see the false floor. I used 1/8" sheet and built some support stands out of 3/4" 14ga square tubing.

Stacks are 6" thin wall pipe.

Burned almost a complete 44lb roll of wire on this little project.

here are a few more pics.

I also forgot to add that this little guy has 6 removeable racks 4 for smoking big meat and 2 for hot dogs and the like.

When finished it will also have a 30 quart fish/turkey fryer on the back, with a toolbox and ice chest storage on the front.

because the wood/charcoal mix is on one side...
and the food of choice is on the other..
and the heat and the smoke "radiate" around the food and thats how the food is cooked..
the food is not in direct contact with the heat source
however it takes many hrs of cooking to get what you want..

depending on what you want I can cook suprisingly fast with that, but if you want fall off the bone it does take some time.

we built one last year out of an old compressor tank,250 gal,on a trailer..sold it on e-bay for 3050.00$it started as a ffa project
