    I also feel this way about nearly every fin fish, shell fish, and sundry other slimy delectable creatures pulled from the ocean.
    I don't eat sea cucumber, preferring the ones grown on dirt.

    I confess to cowardice about swordfish last week. It was the restaurant price I feared. I did get a taste, I'll order it next opportunity.

    That was a dumb thing to say. I used to smoke ham, bacon, & shoulder. ALL other pork roasts benefit from smoking. Mine was an A frame structure of 16' 2x4. At about 7' above the ground was the floor of a small room. Aluminum pipes supported copper wires the pork hung from.
    The floor had an 8" diameter hole the smoke stack from a wood stove sat beneath. In the stack was a T & damper to regulate how much smoke or heat I wanted in the meat.
    I burned whatever green local hardwood I chose that day. It was a delight. The smoke house disappeared in the great flood, I never rebuilt.
